Did you know that tomatoes are about 95% water?
The excessive amount of water in tomatoes is the reason it spoils quickly but the good news is, there are simple ways to store them, so you don’t have to rush to the market every everyday.
Tomatoes are one of the most loved ingredients in cooking. Bright red, juicy, and rich in vitamin C and antioxidants, they’re technically fruits but most of us treat them like vegetables because we use them in almost every meal. From stews to jollof rice, soups, salads, and sauces, tomato is that special ingredient needed and used, both in Nigeria and across the world.
The only downside is that they spoil very fast. Buy plenty today, and within just two or three days, some may already start going bad. The simple solution is to learn how to store or preserve them properly, so they last longer and still taste fresh. You don’t need any special tools, just a little planning.
Today, I’m excited to share easy peasy methods to keep your tomatoes fresh for long.
Easy Ways to Store Tomatoes
If you’ll be using your tomatoes within two to three days and not interested in storing them in the fridge, just leave them in an open basket in the kitchen. Do not put them inside nylon bags because the heat and moisture will make them spoil faster. Arrange them in a single layer if possible, so air can touch each tomato. This way, they will stay fresh for the next meal you want to cook.
If you are not ready to use your tomatoes immediately, keep them in the fridge. You can place them in the vegetable section or an open container. Don’t lock them up in sealed plastic, as it traps moisture and causes spoilage. Tomatoes in the fridge can last up to a week as long as your fridge is functioning well. They may lose a little of their natural taste, but they are still perfect for stews, sauces, and soups.
For long-term use, store in the freezer. This method is perfect when you buy in bulk or want to plan ahead. Wash and blend the tomatoes, then store them in containers or freezer bags. You can also freeze them whole after washing. Anytime you need to cook, just bring out what you need.
Tip: You can boil the tomatoes first to reduce the water before storing in the freezer. But remember to bring them out earlier before cooking in order to defrost properly.
Another easy method is to cook the tomatoes first. Boil until the water dries up and fry them into a thick puree or sauce, let it cool, then pack in containers and freeze. This way, you already have a stew base whenever you need to cook. It makes life easier on busy days.

Dry the tomatoes
There are different methods you can use to dry your tomatoes like sun drying, oven drying, or using a dehydrator.Â
- Sun Drying: Slice the tomatoes thinly and place them on a clean tray covered with cheesecloth or mesh. Place them in direct sunlight and bring them inside at night to avoid moisture. This process can take several days.
- Oven Drying: Slice the tomatoes and lay them on a baking tray lined with parchment paper. Set your oven to the lowest temperature (around 100–200°F) and dry on low heat.
- Dehydrator: Slice the tomatoes and place them in a single layer on the dehydrator trays to dry.
Once dried, store the tomatoes in airtight containers or Ziploc. When you’re ready to use them, simply soak them in warm water or add them directly to your dish. Dried tomatoes give meals a rich, concentrated flavour.
Conclusion
With the knowledge of all these methods, you can explore and decide your preferred way to store your tomatoes. By doing so, you will save cost, reduce waste and keep your cooking stress-free. Whether you prefer keeping them in a basket, the fridge, freezer, or drying them, the choice depends on when and how you want to use them. With just a little effort, you’ll always have fresh tomatoes ready for your favourite meals.
