Pancake is an exciting, easy to fix meal. It can be served as breakfast or snacks depending on the occasion. The process of making good pancakes may vary depending on the individual’s preference. I know some of us are familiar with spicy pancakes (The ones made with onions and pepper). But for today’s recipe, I will be making the regular pancake which I believe would suit everyone especially the children or people who do not like pepper.
INGREDIENTS
- 1 cup all-purpose flour
- Eggs ( I’m using 2 for this. Use according to the size of pancake you’re making)
- Evaporated milk or Whole milk
- Sugar
- ½ Teaspoon nutmeg
- Vegetable oil for greasing
- Baking powder (optional)
- Butter (melted)
- Salt (a pinch)
- Pancake toppings (Syrup)
Let’s begin cooking
- Crack the eggs into a bowl, whisk and add a cup of milk, ½ teaspoon nutmeg  and the  melted butter then whisk together and set aside
- In another bowl measure a cup of all-purpose flour, add baking powder (Optional), sugar and a pinch of salt and mix these dry ingredients together.
- Make a well in the centre of the dry ingredients then pour the wet ingredients into the dry ingredients and mix the batter till it’s smooth. And if too thick, add a little more milk.
- Avoid making your batter too light so that the pancake won’t come out looking too flat.
- Preheat the frying pan and add oil for greasing(preferably a nonstick frying pan)
- Then Scoop some of the batter using a cooking spoon and pour Into the pan. Do not flip immediately wait for some seconds before flipping to the other side to cook. Cook each pancake until bubbles form on top then flip. Â Once cooked remove from the frying pan and repeat the process for the remaining pancake batter. Finally, Serve the pancake with any pancake toppings of your choice.

Pancakes are preferably eaten hot. Have fun trying.
