Spaghetti is one of the most popular pasta in Nigeria. It is prepared in different methods depending on the individual’s preferences. It can be prepared either by boiling and serve with sauce or Jollof method served with chicken or any side dishes.  The method of preparing Jollof spaghetti is almost the same with jollof rice.

In today’s spaghetti recipe, I will be making use of some vegetables to make it healthier and more enticing.

Ingredients

  • Spaghetti
  • Meat(chicken cuts in chunks)
  • Vegetable oil
  • Carrots
  • Green pepper
  • Sweet corn
  • Fresh red pepper
  • Fresh tomatoes
  • Onions
  • Curry powder
  • Seasoning cubes
  • Salt to taste

Preparation stage

Cut your chicken into chunks (depends on your choice of meat and size). Season and parboil then set aside. Parboiling the meat will help you extract stock(meat water) from the meat.

Chop or blend the tomatoes and pepper roughly. Dice your vegetables (carrots, green pepper and onions) into desirable sizes and set aside.

Cooking stage

Break spaghetti into 2-3 and parboil for about 5-7minutes,  drain and set aside.

Heat up pot, add vegetable oil and onion, allow frying  for a minute. Then add the chopped or roughly blended tomatoes and pepper, fry for 2-3 minutes.

Pour the chicken chunks and stock or a little water( water is optional when you’re  out of stock) into the tomato sauce then season and taste. Allow boiling for 2 minutes.

Add the parboiled spaghetti into the sauce and stir.

Add the vegetables, stir and taste for salt. Allow simmering for a minute to avoid overcooked vegetables.

And finally, your vegetable spaghetti is ready to be served.
