How to make festive fried rice

Still in a celebratory mood! Giggles. The festive celebrations are still ongoing which means you still need something exciting to prepare for your family. If you’re in this category then you should try a festive twist on a classic dish. Don’t blame me I’m so excited the new year is almost here.

I know fried rice might sound common but trust me this recipe for festive Fried Rice is the perfect way to spice up your holiday menu. It’s packed with traditional flavors. And it’s super easy to make, so you’ll have more time to spend with your loved ones this holiday season.

What are the ingredients for making Festive fried rice?

  • 3 cups of rice
  • Meat stock(Chicken or turkey)
  • Carrots(Chopped)
  • Sweet corn
  • Green beans and peas
  • Spring onion (Chopped)
  • Thyme
  • Garlic/ginger powder
  • 3 green bell pepper (Chopped)
  • 2 red bell pepper
  • Cow Liver 300g (Chopped)
  • 2kg Chicken (Any choice of protein)
  • 3 chili peppers (Chopped)
  • Vegetable oil
  • seasoning cubes
  • 2 onions  (diced)
  • Curry powder
  • Salt to taste

Preparation

  • The first thing you need to do is to cook the chicken and liver (or any protein of your choice ) well spiced with diced onions,  half a teaspoon of thyme, a teaspoon of curry, two seasoning cubes, half a teaspoon each of powdered ginger, garlic, and salt. Check that the chicken is tender then remove and fry or grill in the oven.  Make sure you  reserve the stock
  • Wash your vegetables thoroughly to remove all hidden dirt
  • Then chop the liver, carrots, and spring onion and place them on a large platter, remove the white center seeds from the green pepper, slice and set aside. This procedure is simple; all you need is a knife and a chopping board
  • Wash your rice thoroughly with hot or cold water, put it in a pot, and Parboil with the reserved meat stock, curry, and a little salt, and allow until it is almost cooked but ensure it is not too hard or soft to avoid getting a soggy rice

  • Drain out the rice water (this helps to keep the rice in a single form)and set it outside
  • You can prepare your scrambled eggs if you want to add them to your dish(optional) I didn’t use it for this recipe though

    Proceed to Cook your Fried Rice

  • Pour a little  vegetable oil into a dry pan and turn the heat to medium
  • Once the oil is heated, add diced onions and stir for about 2 minutes.
  • Then, stir-fry the vegetables starting with the chopped carrot, green beans, green peas, and diced liver.
  • Add some spices including curry powder and seasoning cubes,  then stir and taste. If necessary, add salt and include sweet corn and spring onion, and stir. you can use frozen mixed vegetables straight from the bag.

How to make fried rice

  • The combination might taste a Little salty but don’t worry, the rice would blend the taste.
  • When you’re satisfied with the taste,  add the Chopped green pepper, and then stir in the parboiled rice. ( I usually add my green pepper last to maintain its freshness).
  • Stir everything together, cover the saucepan, and simmer for about 5 minutes

  • Finally, turn off the heat and serve your fried rice
  • You can serve it with fried or grilled chicken/turkey,  vegetable salad, or fried plantain. I know you’re salivating already. Winks.
