If you’re familiar with Nigerian soups you must have heard or know about Oha soup and you might also have eaten it a couple of times. Our recipe today is Oha soup with Achi (Thickener).

Achi is a thickener for preparing some special soups like Bitterleaf soup, Ukazi soup and Ofo Owerri. It’s very popularly in the Eastern part of Nigeria. It can be alternated with Ofor or Cocoyam (thickeners). This soup is preferably eaten fresh because the longer it stays, the more the oha leaves darken and become soggy. That’s why it is best eaten within 2-3days. Most people even consumes immediately after cooking.

Ingredients for Making Oha Soup

  • Oha leaves.
  • Meat(Beef or assorted)
  • 2 cooking spoons of Palm oil.
  • 2 tablespoons of Achi (Blended)
  • 1 large stockfish
  • Crayfish (as desired)
  • Pomo (Cow skin)
  • Ogiri (Optional)
  • Onion
  • Dry fish (deboned)
  •  Seasoning cubes
  • Pepper (Yellow Habanero pepper preferably)
  • Uziza leaves (Optional)
  • Salt to taste

Instructions

Step 1: Wash, season and cook the meat with stockfish till it’s tender enough(to drive stock for the soup).

Step 2: Then use your fingers to cut the Oha leaves into pieces. (you can also slice with a knife but not tiny)

Step 3:  Add palm oil once the meat becomes a little tender with 2cups of water (depending on the quantity of your soup). Allow to boil for a few minutes then add dry fish, crayfish, pepper and seasoning cubes.

Step 4: Add the Achi (you can mix with some water to avoid lumps) cover and cook for about 5-7mintues. Keep stirring to avoid sticking to the pot and burning.  Taste for necessary adjustments and add some water if the soup is too thick.

Step 5: Finally, wash and add the prepared Oha and Uziza leaves(Remember Uziza is optional)to the soup then stir and turn off the heat.  Remove immediately from the pot to retain the freshness of the leaves.

Step 6: Serve with any swallow of your choice.
