Hey! lovely people, welcome back to Chi’skitchen. So today, we will be making beans porridge. Surprised?  I know we’re all familiar with beans porridge. Personally, beans are not my favourite food to eat and I know some other people who feel the same way.  But I have to say sometimes it’s a bang when well prepared especially when eaten with bread, yeah some white bread or fried plantain. I love good food. Winks.

Beans don’t require many ingredients, it’s nutritious and easy to make. So if you have been thinking of how to make beans more interesting and maybe tastier, then stay with me let’s explore together. I have been using this recipe for some time now and I can assure you it is something you’d love. I call it stewed beans or fried beans. Lol I know it sounds funny. I’m sure you must have heard that before and some people call it “Ewa riro”. Whatever you choose to call it that’s what it is [smiles]. So let’s get into today’s cooking.

Ingredients

  • 3cups Nigerian honey beans
  • 2cooking spoons of palm oil
  • Crayfish(Blended)
  • 1 large onion (chopped)
  • Red fresh pepper(blended)
  • Dry fish (Deboned)
  • 2 Seasoning cubes
  • Salt to taste

Direction

Cooking Nigerian beans porridge is easy! Here is what you need to do:

Sort/pick beans, remove any unwanted particles.  Some beans might have more chaff or tiny stones than others depending on the processing of the beans from the farm/plant.

Wash and put the beans in a pot then pour water and when it boils, you can sieve out the water or add more water to continue cooking. Note: sieving out the first water is optional, it has been a  tradition from childhood though and this is done to help reduce the pesticides that may have been used during farming and also to reduce the gas while some people believe it’s a waste of nutrients.

After sieving, Pour beans back into the pot with a good amount of water. keep adding water between intervals but it is preferable to use a pressure cooker because it quickens the cooking time. (when using a pressure cooker please do not open till it cools down to avoid kitchen accidents or make sure you read the manual).

While the beans are cooking, start preparing the other ingredients for the beans like chopping onions and deboning fish. Get all the other ingredients ready.

Once the beans are well cooked (soft), set aside then preheat a clean pot using low heat, add 2cooking spoons of palm oil. ( you can increase or reduce the quantity of oil depending on your preference). I love palm oil in my beans.

Allow the oil to heat up for about 1-2minutes (do not bleach your oil). Then add your onion, crayfish, pepper, dried fish, seasoning cubes. Stir together, taste and add salt if need be.

Now, this is the final step. Pour the cooked beans into the sauce and mix very well. Add a little more water if you prefer your beans lighter. Cover pot and allow to simmer for 5mins using low heat.

Then turn off the heat and serve with fried fish/ plantain (dodo), pap/custard or soft bread. I know you’re salivating already.
